The Cake

It’s the Birthday Girls


request to have a butterfly cake with colors on it like a rainbow.  How could I deny?  But how do you make a butterfly cake?  Well first you need a round cake, I chose to use two this year.


Any type of cake will do.  I made Crazy Cake, it’s vegan.  First you set them on top of each other.


Then you cut them in half and switch the half’s.  Does it look like a butterfly?

Sorry I didn’t get any pictures of the frosting in progress.  It is simple.  Lots of icing tubes and I use the easy flow frosting in a can with the built in decorating tips because it is dairy free unlike the tubes of frosting.  The one issue of making this cake is…


it doesn’t fit in a standard lidded cake plate.  But I think everyone enjoyed it.

Here is my recipe for vegan pancakes.  Certainly not the healthiest.  But they are good.

2 cups Bisquick

3 tsp Egg Replacer (See picture below)

1 Tbl Sugar

1 tsp baking powder

4 Tbl water

1 1/2 cup soy milk

2 tsp vanilla (or as much as you want, I wouldn’t recommend more then 2 tsp)

1 tsp apple cider vinegar or white vinegar

Mix and cook as you would regular pancakes.  To me they taste just like regular pancakes

Vegan Banana Strawberry bread

Oh my goodness, soooo yummmmy!

I took the Betty Crocker recipe I use to make banana bread, added strawberry’s and changed it to be vegan.

1 cup sugar

1/3 cup Crisco

3 tsp egg replacer

1 cup mashed ripe bananas

1/2 cup strawberry puree

1/3 cup water

1 2/3 cup flour

1 tsp baking soda

1/2 tsp salt

1/4 tsp baking powder

2 tsp vanilla (or as much as you prefer)

1 tsp apple cider vinager or white vinegar

Heat oven to 350.  Grease bottom of loaf pan.  Mix sugar and Crisco together in a medium bowl.  Stir in egg replacer.  Add fruit purees and water; mix until combined.  Siff in flour, baking soda, salt, and baking powder; mix until almost combined.  Add vanilla and vinegar (this would be the time to add nuts if you want; walnuts or pecans) at this point; mix until just combined.  Pour into pan.  Bake for 55-60 minutes.  Let cool.  I think it’s better completely cooled.

My previous attempts at vegan banana bread were way to dense.  I think this receipe is exactly like a receipe with eggs in it!

Vegan Donuts

Found a recipe for vegan Donuts. They are called “nuggets”…ummm not sure I like that word. They are cooked in mini muffin tins so I have a feeling they will be muffin shaped. If they are any good they will be frozen and kept for those special moments when there are donuts around so that Anton can feel like he is special too.

Curried Pumpkin Soup

is delicous.  But why did I decide to make that along with making Mac and Cheese FROM SCRATCH for the kids?  Well two of the kids since the little one is allergic to dairy…

That was 2 hours spent in the kitchen.

First: Boil macaroni.  I had to cut open, remove the seeds, peel, and chop the pumpkin.  In my little food processor I chopped up garlic and onions, jalapeno and celery, and carrots.

Second: I made the cheese sauce, which involved making a roux then adding milk and stirring until thickened.  I added the cheese and then mixed it all up with the pasta and topped it with even MORE cheese and put that in the oven.

Third: I made the soup.  Which is pretty easy once you get all the veggies chopped up, and the processor helps a LOT! Love that little thing! $40 at Tarjay!!!

Dinner was really good tonight.  We even figured out that the Mac and Cheese with the soup on top is really really good!  Yes we are daring people.

I also made vegan chocolate chocolate chip cookies today.  Abby’s class is having an ice cream party tomorrow and I couldn’t get a babysitter for Anton so he is going with me.  So I made the cookies since he can’t have ice cream.  Although I have to tell you dairy free chocolate chips are expensive! Just a warning. 🙂

Getting back into this

I need to get back into this.  I’ve set the beading aside until after the holidays, just to much going on right now.  

My mom and I are making a ginormous amount of cookies.  Now I just need to figure out who to give them to.  In the process I am doing a couple vegan recipes for my food allergic toddler. I’ve mastered vegan pancakes and I also have a muffin recipe but I’m still working on that one.  Baking without eggs is tricky.

Thanks to a very dear friend I’ve spent practically nothing on Christmas cards this year, however finding envelopes for them has proven difficult.  Going back out this morning to look some more.

Then I need to finish decorating the house for the holidays.
