So for those of you who don’t know my children have the ability to fall asleep any where.  Especially if they decide not to nap when I tell them they should.  Well, Anton choose not to take a nap Monday.  After Daddy got home from work, Anton preceded to fall asleep in Daddy’s arms while ‘helping’ him play video games.  Do you see the Nintendo controller in the second one?

Later that night after the kids are in their beds sleeping (shocking I know) Tony and I decided to sit down and watch a movie.  Some time during the movie this little critter walked out from under the same sofa Anton fell asleep on.

Anyone know what kind of spider is it?  I hate spiders, they are creepy and they make my skin crawl.

Well this is what Anton looked like when he woke up the next morning: (These were taken at lunch time, sorry about the food around his mouth.)

Now I’m worried that that spider bit him.  It stayed swollen all day and didn’t go down until the next morning.

I initially chalked it up to allergies but now I don’t know.  Like this boy doesn’t have enough problems to deal with.

I love living by the woods, but I also HATE living by the woods!  I have a love/hate relationship with nature.

Vegan Banana Strawberry bread

Oh my goodness, soooo yummmmy!

I took the Betty Crocker recipe I use to make banana bread, added strawberry’s and changed it to be vegan.

1 cup sugar

1/3 cup Crisco

3 tsp egg replacer

1 cup mashed ripe bananas

1/2 cup strawberry puree

1/3 cup water

1 2/3 cup flour

1 tsp baking soda

1/2 tsp salt

1/4 tsp baking powder

2 tsp vanilla (or as much as you prefer)

1 tsp apple cider vinager or white vinegar

Heat oven to 350.  Grease bottom of loaf pan.  Mix sugar and Crisco together in a medium bowl.  Stir in egg replacer.  Add fruit purees and water; mix until combined.  Siff in flour, baking soda, salt, and baking powder; mix until almost combined.  Add vanilla and vinegar (this would be the time to add nuts if you want; walnuts or pecans) at this point; mix until just combined.  Pour into pan.  Bake for 55-60 minutes.  Let cool.  I think it’s better completely cooled.

My previous attempts at vegan banana bread were way to dense.  I think this receipe is exactly like a receipe with eggs in it!

Allergist

Anton had a checkup with the allergist today.  I think the office has a list of tactics about kids with animal allergies.  When we first went in and it was determined that Anton was allergic to cats it was “You should really get rid of the cats.” The next time it was “It would be a good idea to get rid of the cats because he will develop asthma later in life.”  This time? “His air way could be slightly closed now(due to the cat allergy) which means if he has a reaction (to food) he is that much closer to having his air way closed.”  Ugh.  I know we should get rid of the cats, but you know, it’s really not that easy of a thing to do.  I know it should be, however I can’t just drop my cats off back at the animal shelter.  They are over 6 years old.  They will not be placed into another home.  I just do not know what to do.

Well, Anton’s dairy and egg allergies are both borderline, so the doctor decided to do another skin test.  However, nothing has changed.  He got two nice little bumps and redness on his arms.  So same as usual going forward.  He goes back in the end of October.  I have to remember to take him in to have his blood drawn prior to that appointment.  Considering how his numbers are and the size of the welts on his arm today it does look like within the next year he might be able to handle dairy and/or eggs.  I am trying my hardest not to get my hopes up.  No fantasizing about not having to worry about dairy and eggs!  Trying not to.
