Anton did not nap today. So he comes into the kitchen about 15 minutes ago and decides he wants something to eat.  He decides on graham crackers, however I did not get them out correctly or offer them to him correctly or something because it turned into this huge tantrum. First he threw it on the floor. I went to sweep it up and he started screaming that he wanted it. He promptly threw on the floor again. So up it got swept and into the trash. He then spent the next 12 minutes screaming and trying to get the cracker pieces out of the trash can.  I had to put the trash can on the cabinet.  While I was typing this he fell asleep on the floor.  Pictures will be posted later.

Anton will stick to a phrase that is working for him.  Currently he has two:

1. “My Seealfff” — He is very much into indepedence.  He want’s to do everything my himself.  Take his clothes off, put the tops on the sippy cups, pour his drinks, spread the jelly and sunflower seed butter on the bread, flush the toilet, you get the idea.  The problem is, half way through trying to do something he will need help and ask for it.  “Please help mommy.”  So I go to help him, and he say’s “My Seealffff”.  grrrrrrr

2. “He ate it” — If something is missing or gone Tony has said a couple of times that it was eaten.  Well now when ever Anton notices that something is gone he say’s “He ate it”.  He will change up the “he”, it could be ‘you’, or ‘Mommy’, or ‘It was ate’.  It’s really kind of cute.

Allergist

Anton had a checkup with the allergist today.  I think the office has a list of tactics about kids with animal allergies.  When we first went in and it was determined that Anton was allergic to cats it was “You should really get rid of the cats.” The next time it was “It would be a good idea to get rid of the cats because he will develop asthma later in life.”  This time? “His air way could be slightly closed now(due to the cat allergy) which means if he has a reaction (to food) he is that much closer to having his air way closed.”  Ugh.  I know we should get rid of the cats, but you know, it’s really not that easy of a thing to do.  I know it should be, however I can’t just drop my cats off back at the animal shelter.  They are over 6 years old.  They will not be placed into another home.  I just do not know what to do.

Well, Anton’s dairy and egg allergies are both borderline, so the doctor decided to do another skin test.  However, nothing has changed.  He got two nice little bumps and redness on his arms.  So same as usual going forward.  He goes back in the end of October.  I have to remember to take him in to have his blood drawn prior to that appointment.  Considering how his numbers are and the size of the welts on his arm today it does look like within the next year he might be able to handle dairy and/or eggs.  I am trying my hardest not to get my hopes up.  No fantasizing about not having to worry about dairy and eggs!  Trying not to.

Found a recipe for vegan Donuts. They are called “nuggets”…ummm not sure I like that word. They are cooked in mini muffin tins so I have a feeling they will be muffin shaped. If they are any good they will be frozen and kept for those special moments when there are donuts around so that Anton can feel like he is special too.

Curried Pumpkin Soup

is delicous.  But why did I decide to make that along with making Mac and Cheese FROM SCRATCH for the kids?  Well two of the kids since the little one is allergic to dairy…

That was 2 hours spent in the kitchen.

First: Boil macaroni.  I had to cut open, remove the seeds, peel, and chop the pumpkin.  In my little food processor I chopped up garlic and onions, jalapeno and celery, and carrots.

Second: I made the cheese sauce, which involved making a roux then adding milk and stirring until thickened.  I added the cheese and then mixed it all up with the pasta and topped it with even MORE cheese and put that in the oven.

Third: I made the soup.  Which is pretty easy once you get all the veggies chopped up, and the processor helps a LOT! Love that little thing! $40 at Tarjay!!!

Dinner was really good tonight.  We even figured out that the Mac and Cheese with the soup on top is really really good!  Yes we are daring people.

I also made vegan chocolate chocolate chip cookies today.  Abby’s class is having an ice cream party tomorrow and I couldn’t get a babysitter for Anton so he is going with me.  So I made the cookies since he can’t have ice cream.  Although I have to tell you dairy free chocolate chips are expensive! Just a warning. 🙂

Infant and Toddlers

Anton just had his second and final meeting with the Infant and Toddler program in our county. It’s an Early Intervention program.  A few months ago I wasn’t sure his language was developing on target.  However, once the worker came to evaluate him he came out with a bunch of words I had never heard him say before!  That’s my boy, prove Mommy wrong! LOL  The worker just wanted to come out and give him one last check once he turned 2.  So now his “file” is officially closed (not that he really had a file)

Abby is currently in the preschool program that follows once the child turns 3.   She did have communication delays.  She is still receiving speech therapy and will continue to do so until the end of this school year.  However she’s made great progress since she started the program back in April.  They do not think she will need to continue next school year.

So the questions is: What do I do with the children next year?
